Deviled Eggs with a Healthy Twist

I love making classic dishes healthier without taking away any of the great taste.

And that’s exactly what I did with these deviled eggs.

The healthy twist with these deviled eggs is that I use hummus in place of half of the mayonnaise. I still like to include a little mayonnaise for the flavor, but the hummus provides a nice creamy texture. Plus it adds a little extra protein and fiber to your appetizer!

I’ll be making these healthier deviled eggs for Easter this weekend. They’ll make a perfect appetizer. (And no one will notice that I’ve put a healthy twist on them!)

Time-saving tip: Hard boil the eggs and make the hummus the day before.

Ingredients
  • 6 eggs
  • 2 Tbsp mayonnaise
  • 2 Tbsp hummus
  • 1 tsp white vinegar
  • 1 tsp mustard
  • 1/8 tsp salt
  • paprika for garnish
Instructions
  1. In a saucepan, place eggs in a single layer, then add water until eggs are completely covered. Heat on high uncovered, bringing water to a boil. Once it's reached a boil, cover and remove from heat. Let sit, covered, for 12 minutes.
  2. Place eggs into a bowl of ice water, stirring eggs for about 2 minutes or until cooled.
  3. Crack eggs and carefully peel off the egg shell under running water.
  4. Slice eggs in half (hot-dog style).
  5. Carefully scoop out the yolk and place in a medium-sized bowl. Set egg whites on a serving dish.
  6. To the bowl with egg yolks, add mayonnaise, hummus, vinegar, mustard, and salt. Mash together with a fork until smooth.
  7. Scoop spoonfuls of egg mixture into egg whites, dispersing evenly. Or add egg mixture into a storage bag (like a Ziploc bag), cut off a small bottom corner, and squeeze the mixture into the egg whites.
  8. Lightly sprinkle with paprika to garnish.
Recipe Notes

For hummus, make your own hummus in just 5 minutes! Or if using store bought hummus, choose an original/plain flavor.
